Saint-Véran is one of those places that knowledgeable French wine drinkers go to buy quality white Burgundy at a sensible price. This is Chardonnay at a different level and cannot be compared to lesser offerings from other parts of the world.  David Fagot came here to the famous village of Fuissé in 1998 when he “discovered the vine and the fascinating professions of winegrower and winemaker”.  He believes that to make natural authentic wines then you need to be minimalist in both the vineyard and the wine cellar – only intervene when necessary is the mantra.
Manually harvested grapes, then vinification is carried out in temperature-controlled stainless-steel tanks, to preserve all the freshness and delicacy of the Chardonnay grape. It is then aged for nine months on its fine lees before gentle filtration and bottling. A very expressive, light golden wine revealing aromas of citrus and white flowers especially acacia. Fresh, clean, and fruity with notes of pear, peach, pineapple, and hazelnut. A long and biting finish nicely balanced with streaks of honey – in essence real chardonnay to excite and savour.
Serve chilled this wine makes an excellent aperitif due to its crisp fruit but also makes a great match for fish or white meats especially veal or chicken.
